To say we have an overabundance of tomatoes would be an understatement. A HUGE understatement. Dan planted SIX tomato plants this year. He is quite proud of his tomato harvest- but I am a bit overwhelmed with the piles and piles and piles of tomatoes that are on my kitchen counter and grow bigger each day. We've eaten them (the girls now realize what a delicious little snack cherry tomatoes can be- success!) We've given some (ok, lots) away. We've frozen some. We've tried just about every tomato recipe known to man. Today was a rainy Sunday. A blessing, really, after a crazy work-filled week and busy Saturday. The weather forced us all to stay inside and just hang out. With all this time, I decided to try roasting some of the tomatoes- just to see what would happen. OH. MY. GOD. These things are amazing. I plan on roasting a few more pans this week. Rumor has it, I can freeze them and use them in recipes all year. Today, however, I decided to take my roasted tomatoes (what was left after "sampling" MANY of them...) and make a pizza! The girls and I mixed up some pizza dough. It raised while they napped and the tomatoes were roasting. I picked some fresh basil from our plant outside, a few slices of fresh mozzarella, and...viola! The yummiest pizza ever! I had to take pictures and share!
